Northern Indian Raita

Ingredients

  • Plain yogurt: Full-fat yogurt works best for a richer texture, but low-fat is also acceptable.

  • Cucumber: Typically grated or finely chopped. Some recipes recommend deseeding it first.

  • Spices: Ground cumin and salt are essential for flavour.

  • Fresh herbs: Mint and/or cilantro are very common additions.

  • Chili: A green chili, red chili powder, or cayenne pepper can be added for heat.

Method

  1. Prepare the vegetables: Grate or finely chop the cucumber and squeeze out any excess liquid.

  2. Combine ingredients: Mix the prepared vegetables, herbs, and spices into the plain yogurt.

  3. Season and chill: Add salt to taste and any other desired seasonings like lemon or lime juice. Chill the mixture for at least 20 minutes.
