Bolognese

Serves approx. 6 people

Ingredients

• Olive oil

  • 1 fennel bulb – diced

  • 1 large carrot – diced

  • 1/2 cup cabbage – finely sliced

  • 1 T oregano

  • 1 T basil or mixed Italian herbs

  • 1TTyme

  • 2 bayleaves

  • 1/2 t crushed red pepper/chilli flakes

  • 1 1/2 cups TVP

  • 3–4 T soy sauce

  • 1 1/2 cups vege stock

  • 1/2 cup tomato paste (8 T)

  • 4 T nutritional yeast

  • 1 can crushed tomatoes

Method

  1. Add oil to a large pan/pot.

  2. Add cabbage & sauté till it starts turning

    dark.

  3. Add fennel + carrot & sauté 3–5 minutes.

  4. Add all herbs & sauté another 1 min.

  5. Add TVP & mix well in the pan.

  6. Add soy sauce & mix well.

  7. Add tomato paste + nutritional yeast & mix

    well.

  8. Add vege stock, gently mix for about 1

    minute.

  9. Add crushed tomatoes & let simmer for a

    minimum 10 mins.

  10. Before serving, remove bay leaves.
