Bolognese
Serves approx. 6 people
Ingredients
• Olive oil
1 fennel bulb – diced
1 large carrot – diced
1/2 cup cabbage – finely sliced
1 T oregano
1 T basil or mixed Italian herbs
1TTyme
2 bayleaves
1/2 t crushed red pepper/chilli flakes
1 1/2 cups TVP
3–4 T soy sauce
1 1/2 cups vege stock
1/2 cup tomato paste (8 T)
4 T nutritional yeast
1 can crushed tomatoes
Method
Add oil to a large pan/pot.
Add cabbage & sauté till it starts turning
dark.
Add fennel + carrot & sauté 3–5 minutes.
Add all herbs & sauté another 1 min.
Add TVP & mix well in the pan.
Add soy sauce & mix well.
Add tomato paste + nutritional yeast & mix
well.
Add vege stock, gently mix for about 1
minute.
Add crushed tomatoes & let simmer for a
minimum 10 mins.
Before serving, remove bay leaves.
